Well Savor Estes Park 2011 is off to a fantastic start not just at our Bakery but, also, at our new Café (You Need Pie!™ Too Café). All tolled we served over 350 people between our two locations. We had our signature $3 dessert plate at both locations and served up delicious hot quiche and baked potatoes at our Café demonstrating both the quality and diversity of our savory options at the Café's extensive, full-service, breakfast, lunch, and dinner menu.

27 excited restaurants are lined up to participate in "Savor Estes Park". So, save the 5 Thursdays of March (March 3th, 10th, 17th, 24th and 31st) from 4:30PM -7:30 PM. You are in for a really big treat! Thousands of people participated in last year's Savor Estes Park... and this year's "Savor Estes Park" will be even BIGGER!

Start the afternoon with a matinee special of 3 different movies at The Reel Mountain Theater at 1:00pm.

Participating restaurants will be serving a 6” plate of some of their specialty foods with a glass of wine, beer or soft drink. The cost for each restaurant is $3.00 per person. Residents or visitors are encouraged to visit 2-3 different restaurants each week that they haven’t been to or go to your favorite restaurants and enjoy their fabulous cuisine at a very reasonable price. You will even find a few new restaurants that you will surely will go back to sometime soon.

And… don't forget to finish the night with a stop for dessert! All you have to do is show up, let the restaurant know that you are there for "Savor Estes Park" and you will get their specialty plate for only $3.00. It’s a GREAT meal-deal and a chance to try those restaurants that you’ve been wanting to try! If you plan it right, you could go to 15+ new restaurants during the month of March…and for a great VALUE!

So get your 2011 calendars out and mark these dates: March 3th, March 10th, March 19th, March 24th and March 31st from 4:30PM - 7:30PM. The Mt. Olympus Breakfast is our signature Prix Fixe Plate featuring a mouth-watering assortment of our breakfast treats including a sizable portion of our French Toast Casserole, a two-egg cheese fritatta, a serving of breakfast meat, a serving of our hash brown casserole, and a cinnamon roll or a sticky bun! Most people find it too big for one person; and, until recently no single person had ever finished it in house in one sitting. The first person to complete the challenge prompted us to start a Hall of Fame to recognize the few who complete this feat of culinary fortitude truly worthy of its namesake mountain, Mt. Estes Park, CO, USA January 28, 2011 – The results of days of tasting and voting for the 'World's Best Coffee to Go with Pie' are in, and Kind Coffee, LLC. and the You Need Pie!™ Too Café, both located in downtown Estes Park, Colorado, will reveal the winning blend at a special, invitation-only party to be held at the café on February 10, 2011 between 12:30 p.m. and 2:30 pm M.D.T.

The winning coffee blend will be dubbed, "You Need Pie!™ Coffee" and become the signature blend to be served at You Need Pie!™ Too Café. It will also be for sale locally at Kind Coffee, the Estes Park Pie Shop & Bakery, and natioanlly via the web.

"It was incredibly rewarding to witness so many people from all over the world participating..." as voting between three specially-designed blends of Kind Coffee were sampled with Estes Park Pie Shop & Bakery's pie during Estes Park's Winter Festival held January 19-21..."in this wonderful event," said café manager, Scooter Thompson. "There were people from as far away as Sweden and Australia not to mention Alabama and Iowa who got to voice their opinion."

"Not only did we have visitors from out of town here to taste coffee and
pie, our local customers were very excited to participate in this event. The
entire weekend was 'a buzz' with all the festivities, and it was a great
promotion for our businesses and town," added Amy Hamrick, owner of Kind Coffee, LLC.

Those in attendance for the reveal-party can expect great food and festivities as well as free samples of the winning blend. There are still seats available for the event. On 10 February 2011, at an invitation-only luncheon headlined by Harps on the Rocks and the Honorable William Pinkham, Mayor of Estes Park, CO, more than 25 coffee and pie enthusiasts were held in anticipation when at approximately 1:45 p.m. MST, Scooter Thompson, You Need Pie!™ Too Café manager / partner revealed the outcome of the previous round of voting. Voters from all over the world including people from as far away as Sweden, the UK, Australisa and several countries in South America as well as many people from all over the United States voted that Kind Coffee, LLC., blend C should be selected as the World's Best Coffee to Go with Pie. Despite losing, blends A and B put in good showings – a testament to how great all three were and how good Kind Coffee is. After winning, Blend C was officially revealed at the new house blend for You Need Pie!™ Too Café and the Estes Park Pie Shop & Bakery. In addition, the new coffee simultaneously went on sale at the Café and the bakery in 2oz souvenir packs and 12 oz packs, the You Need Pie! web secure store at You Need Pie!™ Coffee, and the Kind Coffee, LLC webstore – the latter only until the end of February.

During the annual Estes Park Winter Festival, 14-17 January 2011, free samples of Estes Park Pie Shop & Bakery pie and the candidate blends will be available for sampling and voting at both the Kind Coffee shop located at 470 E. Elkhorn Avenue and the You Need Pie!™ Too Cafe located at 145 E. Elkhorn Avenue between the hours of 9:00 am to 5:00 pm. In a joint venture, between Estes Park's renowned, independently owned, organic coffee roaster and the café cousin of the Estes Park Pie Shop and Bakery, the owners of Kind Coffee, LLC. and the Estes Park Pie Shop & Bakery announced their intention today to invite the people of Colorado to sample their specially-blended coffee and scratch baked pies during Estes Park's Winter Festival January 14-17, 2011, and then vote for one of the blends to be dubbed 'The World's Best Coffee to Go With Pie!'. The results of the days of sampling and voting are planned to be revealed at a special luncheon and unveiling ceremony to be held at the You Need Pie!™ Too Café at 12:30 pm M.D.T. on Thursday, February 10, 2011.

Cookie-Decorating Parties are generally held once a month at You Need Pie!™ Too Café. They are designed for kids ages 5-12, but we've had plenty of older kids, including a few parents sign-up. Truthfully, we've had some non-parents sign up too with claims they just wanted to relive their childhood and who are we to argue?

For $4, kids get 3-4 cookies to frost and decorate which are then wrapped to take home, plus two more to frost, decorate, and eat during the party with a cup of milk. So much fun has been had many kids returned for each party held last fall. There are two sessions each day able to accommodate up to 15 kids. If you are interested, please call and reserve a slot for your child today!

Recently remodeled and re-open for just more than a month, Estes Park's newest, full-service café, You Need Pie!™ Too, located at 145 East Elkhorn Avenue plans to hold a complimentary soup and sandwich tasting and open house for the public on Tuesday, 14 December 2010 from 11:00 am to 2:00 pm with entertainment provided by the acclaimed Harps on the Rocks. For the tasting, organic Agave Cashew nut butter sandwiches will be expertly paired with the café's exclusive, scratch Ginger Carrot soup.

Estes Park, CO, USA December 6, 2010 – You Need Pie!™ Too Café will hold an Open House and complimentary Soup and Sandwich Tasting with entertainment provided by Harps on the Rocks from 11:00 am to 2:00 pm on Tuesday, 14 December 2010 at the Café located at 145 E. Elkhorn Avenue in the Park Place Mall in downtown Estes Park. On hand to welcome guests will be the chef of the Café, Rick Thompson, as well as Alex Wieser, the local organic nut butter maker known for Weezr's Butter – an Estes Park farmers market favorite. In addition, You Need Pie!™ Café will become a local retail outlet for Weezr's butter selling a wide variety of flavors and taking orders for holiday gift baskets. Providing entertainment for the affair will be Harps on the Rocks, the trio of Connie Dedon, Rebecca Hazlitt, and Karolee McLaughlin known throughout the front range for their exceptional performances of folk, Celtic, classical, sacred, and secular music.

"We were all very excited when the pieces of the puzzle including our most successful new scratch soup, Alex's Weezr nut butter, and an agreement by Harps of the Rocks to provide the entertainment all came together to allow us to put forth what we believe will be a very special occasion. We hope this event will the start of great things to come, and that our first open house, since the remodel was completed, will be as welcoming, enjoyable, and warm as possible," said Scooter Thompson, Café manager.

What's an All-Day Cereal Bar? We've been confusing and confounding a lot of folks with our all-day cereal bar. Some folks have thought it was like a big granola bar they could buy and take on a hike. Should we have called it a cereal buffet instead? Here are the details...

• Our cereal bar is rather unique.

• Step 1: Choose your milk size:

• • Kid's Size: just the right amount for a kid or a kid at heart, especially good for an after school snack or cure to late-night munchies.

• • Full Size: double the Kid's size, double the impact.

• • Milk Flight: this is a great way to try three different kinds of milk.

• • Two Full Servings: Sure, you can have two kinds! This size is for those who like a bit more milk than cereal in the bowl. Yes, you know who you are!

• • All You Can Drink in 2 Hours: That means unlimited milk for a two, consecutive-hour period. This is for people who really want to go nuts and try all the milks and cereals they can get their hands on.

• Step 2: Choose your milk: We have 27 kinds of milk in stock. No, we generally don't have goat, yak, or buffalo, but we might someday, so keep asking. We do, however have all kinds of cow milk (regular, organic, and Kefir), soy milk, coconut milk, almond milk, and rice milk. Believe us, you won't be bored when it comes to picking milk.

• Step 3: Choose your cereal(s) from over 25 kinds. We have way more than 25 kinds, but you'll have to stop by to find out actually how many.

• You can all of the cereal you want until our milk runs dry! If you run out of milk, you can always buy more!

Summary Note:

Well Savor Estes Park 2010 came to a spectacular finale. On the final Thursday, we served 572 plates – shattering our previous record of 518 set the week before and without a line ever longer than 20 people! We want to thank Phil & Mel first and foremost for dreaming up this winter-time event that allows for locals and visitors alike to participate in what we think must be the biggest progressive dinner on earth. Their support for the town of Estes Park and their diligent efforts to support local businesses is tireless. We hope the entire town feels the same way we do. Next up, we need to thank our staff who spent many an evening hand-crafting and baking the delicious treats we served each Thursday trying so hard to make sure every guest was able to have his or her first choice of pie. Thousands of people participated in last year's Savor Estes Park and had a great time! Many people said it was like a big block party! One person said, “Everyone goes out to dinner sometime, but during “Savor,” everyone goes out to dinner on the same day at the same time!” It was a so much fun seeing all of our friends and finding out what the “buzz” was on the street.

Participating restaurants will be serving a small plate of their specialty foods with a glass of wine, beer or soft drink. The cost for each restaurant is $3.00 per person. Residents or visitors are encouraged to visit 2-3 different restaurants each week (or more, if you’re really hungry!) that they haven't been to or go to your favorite restaurants and enjoy their fabulous cuisine at a very reasonable price. You will even find a few new restaurants that you will surely go back to sometime soon.

All you have to do is show up, let the restaurant know that you are there for "Savor Estes Park" and you will get their specialty plate for only $3.00. It’s a GREAT meal-deal and a chance to try those restaurants that you’ve always wanted to try! Cut out the map and strategize which restaurants you will be visiting each week. If you plan it right, you could go to 12-15 (or more!)new restaurants during the month of March and for a great VALUE!

Chicken Pot Pie
This is not your tv-dinner variety chicken pot pie, no way. Picture almost five pounds of freshly prepared potatoes, carrots, peas, and enough savory seasoned chicken to satisfy a family of lumberjacks all blended with a delicious, scratch made cream sauce and baked in a flaky pastry pie shell with a full pastry top.

Quiche
They say, real men don't eat it, but ours may be the first quiche real men won't only eat, but they'll come back for more. Part of our success in making some of the tastiest quiche you've ever eaten is that we use only the finest ingredients and make everything in it from scratch ourselves in our bakery.

Lasagna
One of our grandmothers is Italian, therefore we have to make her proud with our lasagna. We use, with her permission of course, her recipe for the sauce perfected over a half century in New York City where she grew up and lives to this day. Again, this is a pattern with us, but while we don't make the noodles in house, we make everything else from scratch.

Italian Rustica Pie
If you haven't heard of Italian rustica pie, that's ok. Some people describe it as a giant calzone. We tend to think of it as pizza baked into a pie. Like our chicken pot pie, this dish doesn't suffer from being too small. Our Italian rustica pie is perfect for those seeking a hearty meal where no one leaves the table feeling hungry.

Pie Making - Learn to make fruit and cream pies, including our fabulous pie crust! Class is limited to 6 people. Each participant will take home a pie and recipies for fruit filling, crust, and crumble topping. Time: 2.5 hours; Fee: $35.

Cookie Making - Typically offered around the holidays, our cookie making basics shows you how to use 1 dough recipe and modify it for 12 different flavors. As well, the dough is suitable for rolled & cut cookies, drop cookies, shaped cookies or pressed cookies (in a cookie press). Each participant will take home a variety tray of cookies, along with recipes. Class is limited to 10 participants. Time: 2.5 hours; Fee: $35.

Bread Making - Making bread is not as hard as you think! Participants learn to proof yeast, learn what dough looks and feels like, and how to adjust baking times for high altitude. Class is limited to 6 participants. Time: 3 hours Fee $35.

Sweet Bread Making - Learn how to avoid the typical pitfalls and havoc wreaked by high altitude sweet bread baking. Participants will make 4 kinds of sweet bread and each participant will take home at least 1 loaf. Class is limited to 6 participants. Time: 2.5 hours; Fee $35.

Pie Making Help Guide

Crust Issues:
My dough cracks or falls apart when I try to roll it out!

The dough is most likely too dry or it could be too cold. The dough should feel soft and pliable, not unyielding. If it is crumbly, it's too dry. Add cold water, a few drops at a time, but avoid over mixing. Handling your dough too much will make it tough, so try to knead in the water gently. If it's cracking around the edges only, it's probably just too cold. Let it sit on the counter for a 1/2 hour or so to warm up.

I can't get my pie crust off the counter, or it sticks to the rolling pin.

Try flouring the surface of the board adequately and flouring your rolling pin. You might also try chilling the dough before rolling as well. You can also roll the dough out between sheets of waxed paper.

My crust isn't flaky!

For soggy crust, you can lightly brush the bottom crust with beaten egg white before pouring in your filling. This forms a seal over the crust to prevent it from getting soggy. If the crust is tough and not flaky (but also not soggy), then the issue is likely that you overworked the dough when you mixed it, or that the dough got very warm so the fats melded together.

My crust isn't getting brown!

Many crusts contain vegetable shortening which won't brown until it is cooked for a very long time. To prevent burning your pie to get a brown crust, brush the top of the pie with milk, or with egg wash made from 1 beaten egg + 1 Tbl water.

I pre-baked my pie crust, and it shrunk!

Keep the dough refrigerated before rolling it out and be sure not to stretch or pull the dough when forming it to the pan. Use a fork to poke the dough all the way around on the sides and bottom. This will allow the steam to escape so the crust doesn't puff up. As soon as you take the crust out of the oven, use an oven mit to push down any dome-like shape in the middle.

Fillings
My fruit pie is a watery mess and won't set up.

Be sure you're using enough thickening agent. Typically fruit pies that are baked in the shell use either flour, corn starch, or quick cooking tapioca as a thickener (or a combination of 2 or all three). Fruit is full of water naturally, so these thickeners combine with the natural fruit juice to make the 'syrup' for the pie. The other option is to cook your filling on the stove and then pour it into an unbaked pie shell. Be sure the pie has cooled completely before you slice it--the filling needs time to set properly.

How can I tell when my custard pie/pumpkin pie/pecan pie is done?

We like to use what we call the "jiggle test". Cook your pies on a cookie sheet. Typically these kinds of pies bake for about an hour. After 1 hour, jiggle the cookie sheet while looking at the middle of the pie. If it looks like liquid with a skin on top - add 15 minutes. If it looks like firm jello - you're done!

SWEET BREADS

Help! My banana bread (or other sweet bread) sunk in the middle - it's like a moon crater! What did I do wrong?

This is one of the trickiest parts of high altitude baking. Unfortunately, there is no magic formula for adjusting for altitude. Because the air pressure is greater at altitude, the leavening (baking powder or soda) in your bread reacts more quickly - rising up very fast while baking. The center isn't baked fast enough, so the bread rises quickly, then the structure of the bread can't support itself, so it sinks. There are a few things you can do - you just have to play around with it and through trial and error you'll get it fixed! First, add about 1/4 cup more flour, and cut the leavening (baking powder or soda) by 25 - 30%. Try a combination of adjusting those two things and eventually you'll get it!

I baked my famous chocolate chip cookies and they turned out like 5" pancakes! What can I do to make them "regular cookies"?
My suggestion would be to add extra flour - especially if your cookies have a lot of butter in them (or if butter is the only fat). Adding about 1/2 - 1 extra cup of flour per batch should do the trick!

My yeast bread didn't rise - what do I do with this brick?
"Brick bread" as we call it at the bakery can have many causes. First, you should always proof your yeast when baking yeast bread. This is a step where you put the yeast in a few Tbl of warm water (then subtracting that amount of water from the recipe total so you are still using the same total volume amount of water or milk). In a small bowl, stir the water, yeast, and 1 tsp sugar. Let it sit 15 minutes. If the yeast mix gets milky and foamy - you've done it right. Add it to the recipe during the 'add the yeast' step and keep on truckin'! Sometimes, the yeast is old and won't react properly, or sometimes you get carried away with water that is too hot and kills the yeast. This step will prevent that.

Secondly - don't over mix. This is a common problem when using a bread machine. Bread dough should be elastic and stretchy. You can cut back on the amount of flour you're using if your bread is stiff. (Wheat and multigrain will be stiffer than white, but it should still be stretchy).

Thirdly - watch your rising. Let the bread loaves rise during the rising stage until it crests the top of the loaf pan. If you let it rise too long, the structure isn't supported and it will fall (with a loud noise, slam of the oven door, etc.) Then - you get a brick!

Lastly - don't over knead. Kneading is basically to remove air bubbles and to smooth out the bread and work it into a pliable state. The more you knead, the more flour you are adding which can make bread stiff and dense.

It came under new ownership and management in 2008, when Valerie and Rick Thompson fulfilled a life-long dream to own and operate a working Bakery and Pie Shop on Elkhorn Avenue in Estes Park, Colorado. Having virtually grown up in Estes Park, the two had long dreamed of being a part of the thriving Estes Park community as business owners on the main strip.
